A delicious blend of mild and bold baby greens, the crop that started it all at Earthbound Farm.

Spring Mix (or mesclun) is a popular salad mix of assorted tender leaves. At Earthbound Farm, baby lettuces were some of our first crops back when we started farming organically over 25 years ago. We sold our fresh organic baby greens to friends and neighbors, then to local chefs in Carmel and Monterey, CA, who loved the flavor and texture of the tender little leaves. Later we became the first company to launch fresh, pre-washed organic salad greens for retail sale, and we helped start a salad revolution.

Although the ingredients in our mix may vary seasonally, the blend regularly contains baby leaves of red and green romaine and oak leaf lettuces, lollo rosa and tango lettuces, red and green chard, mizuna, arugula, frisée and radicchio. The assortment offers a potpourri of appealing colors and shapes, with leaves ranging from emerald green to burgundy, and textures varying from tender to crisp, smooth to ruffled. All of our Spring Mix salad blends have a perfect balance of sweet, peppery, and bitter flavors for enticing salads with delicious depth and complexity.

Mixed Green Salad with Mango-Ginger Vinaigrette

Ingredients

• 1/4 cup fresh Earthbound Farm Organic Mango cubes
• 1 teaspoon minced shallot
• 2 teaspoons Earthbound Farm Crushed Fresh Ginger Organic Purée (or grated fresh ginger)
• 1 lime (zest)
• 2 tablespoons fresh lime juice
• 1 tablespoon unseasoned rice vinegar
• 3 tablespoons mango nectar
• 1/8 teaspoon wasabi powder
• 1/8 teaspoon salt
• 1 teaspoon Sugar (or honey)
• 1/4 cup olive oil
• 5 ounces Earthbound Farm Organic Baby Romaine (or Spring Mix, or your favorite greens)
• 1/4 cup chopped macadamia nuts
• fresh mango slices
• 2 tablespoons finely minced crystallized ginger

Directions:

Combine all dressing ingredients apart from the oil in blender and purée until smooth. With the machine running, add oil in a slow stream.

Place the salad greens in a large bowl and add the vinaigrette, tossing to coat the leaves.

Divide the greens between chilled salad plates and garnish with macadamia nuts, mango slices and a sprinkling of crystallized ginger, if desired.
