Will Studd Brillat Savarin is handmade in Burgundy, France. In the beginning glance, it looks like a tall compact wheel of Brie, packaged in a charming wooden box. Unlike Brie, then again, this is an artisan triple-cream cheese, this means that the cow’s milk has been enriched with high-quality cream. It has a buttery and deliciously creamy flavor and finishes off with a gentle tang. It takes its name from the famous 18th century French food author Brillat Savarin, and used to be at the beginning created in the 1950s by Parisian affineur, Pierre Androuet. This example from Burgundy is unique because, unlike industrial versions, it used to be ripened under a thin coat of wrinkled yellow Geotrichum mold naturally found in unpasteurized cow’s milk. This mold is rarely used because it’s hard to wrap, but the poplar wooden box creates the ideal moist micro-climate for it to thrive.
